Family Favorite. My family loves this meal! Chicken is always an easy protein go-to for us, and these baby potatoes are so fun. These fresh green beans are a delicious touch, but you can substitute them with your family’s favorite vegetable easily!

Pocket Friendly! I almost always keep chicken in our freezer along with these dry goods. So, I know that I can whip this meal up quickly before work. All of these ingredients are very affordable, which is important when feeding a family.

Here are the ingredients you will need to make this slow cooker chicken potatoes and green beans:

  • Boneless Skinless Chicken Thighs: substitute with bone in or boneless skinless chicken breasts if preferred. Increase your cooking time if using bone-in.
  • New Baby Potatoes: you can find these near the other potatoes, and they are normally sold by the pound. You can use any types you like.
  • Dry Chicken Gravy Mix: substitute with Lipton onion soup mix if preferred.
  • Lemon Juice: freshly squeezed lemon juice is best. However, you can use prepackaged for ease.
  • Italian Dressing Seasoning
  • Condensed Cream of Chicken Soup: you can substitute with cream of mushroom as well! Grab what you have in your pantry.
  • Fresh Green Beans: substitute with frozen green beans to hold up in the crockpot for longer.

Variations

  • Use Lipton onion soup mix instead of the dry chicken gravy if desired.
  • Use frozen green beans instead of fresh ones! They will take longer to cook than the fresh ones so add them after the chicken and potatoes have cooked about 3 hours. If you have thin frozen beans I recommend you add them at the same time as the fresh ones – so after the chicken and potato mixture has cooked about 4 hours.
  • Thicken your sauce at the end of cooking with a cornstarch slurry. Use a 1:1 ratio when creating. One tablespoon of cornstarch to one tablespoon of water. Stir together until well combined, and then mix into your gray. Add more until your desired thickness is achieved.

1. In a small bowl, mix together the cream of chicken soup, Italian seasoning, chicken gravy mix, and lemon juice.

Tip #1 You can use bone-in chicken thighs if you need to stretch your cooking time. Bone-in chicken thighs or breasts take longer to cook, so they stay tender for longer.

Tip #2 Use frozen vegetables instead of fresh ones so they hold up while cooking for a longer period of time.

Tip #3 Check the internal temperature of your chicken when getting closer to being done. A safe internal temperature is 165 degrees F.
