I just know you’re going to love this one. This Slow Cooker Honey Garlic Chicken and Vegetables is one of those recipes that is SO incredibly easy you won’t believe it. No more cooking chicken, roasting red potatoes and steaming vegetables separately!  Just throw them all into a Slow Cooker {i.e. Crock Pot} and have a delicious healthy dinner on the table. And, this one is a crowd pleaser! My whole family including my husband and four picky kids devoured it.

The chicken ends up so moist and flavorful and the veggies are cooked to perfection. My favorite is the combo of honey and garlic! A little bit of sweet and so flavorful! I think it’s officially my favorite combo, I know you’ll love it too!

Also, this one is also perfect for busy days with sports and activities. Add it all to the slow cooker in the morning and dinner is ready and waiting by the time you finally get home for the night. 🙂

Slow Cooker Honey Garlic Chicken and Vegetables

Serves: 8 servings
Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 pound red potatoes, halved
  • 1 pound baby carrots
  • 1 pound green beans, trimmed
  • ½ cup reduced sodium soy sauce
  • ⅓ cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
Instructions
  1. Put chicken breasts, potatoes and carrots in a 6-7 quart slow cooker.
  2. In a separate bowl whisk together soy sauce, honey, garlic, basil, oregano and pepper.
  3. Pour the soy sauce mixture over the chicken and vegetables. Cook on low for 7-8 hours or on high for 3-4 hours. Add the green beans during the last 30 minutes of cooking time.
  4. Enjoy!
