Sear half the beef cubes until browned on all sides. Transfer to a plate and repeat with the remaining olive oil and beef. Add all seared beef (and juices) to the slow cooker.<\/li>\n<li>Add the onion to the skillet and cook for 3 minutes until softened. Stir in the garlic and cook for another 30 seconds. Transfer the skillet contents to the Crockpot.<\/li>\n<li>Add the baby potatoes, carrots, celery, beef broth, tomato paste, Worcestershire sauce, balsamic vinegar, salt, pepper, smoked paprika (if using), and thyme to the slow cooker. Stir to combine.<\/li>\n<li>Nestle the bay leaves on top. Cover and cook on low for 8-10 hours or until the beef is fork-tender.<\/li>\n<li>For a thicker stew, whisk together cornstarch and 2 tablespoons cold water, then stir into the stew. Let it cook on high for an additional 10-15 minutes until thickened.<\/li>\n<li>Remove bay leaves before serving.
