Feel free to use chicken thighs instead if you prefer.<\/li>\n<li><strong>Fresh Green Beans<\/strong>: Fresh is best for cooking in the slow cooker. They require very little prep at all.<\/li>\n<li><strong>Petite Red Potatoes<\/strong>: These are waxy potatoes which hold up well in the slow cooker. You can use other potatoes but fluffy or all-purpose potatoes may break up more during the process of slow cooking.<\/li>\n<li><strong>Olive Oil<\/strong>: Add moisture and fat to the simple lemon marinade for this dish. You can substitute another neutral vegetable oil if you prefer.<\/li>\n<li><strong>Lemon Juice<\/strong>: Adds a bit of brightness and acidity to the dish. If possible, use freshly squeezed lemon juice. Pat the chicken dry with a paper towel and trim off any excess fat. Place the chicken breasts in the middle of the slow cooker.<\/li>\n<li><strong>Step 2: Assemble the vegetables<\/strong>. Trim the green beans and cut the potatoes. Arrange them on the sides of the chicken in an even layer.<\/li>\n<li><strong>Step 3: Whisk the marinade<\/strong>. I usually leave the green beans intact but you can cut them into smaller pieces if you prefer.<\/li>\n<li><strong>Prefer Crunchier Green Beans:<\/strong> Add them in the last hour of cooking on top of the chicken and potatoes.<\/li>\n<li><strong>Cook Properly. <\/strong>Use a thermometer to check that the internal temperature of the chicken is 165\u00b0 F before serving.<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div class=\"wp-block-group\">\n<div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 id=\"storing-freezing\" class=\"wp-block-heading\"><strong>Storing &amp; Freezing<\/strong><\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Storing: <\/strong>Transfer any leftovers to an airtight container and refrigerate for up to 4-5 days. You can also freeze it for up to three months.<\/li>\n<li><strong>Reheat: <\/strong>Reheat in the slow cooker on LOW heat until warmed through. Thaw out leftovers in the fridge overnight before reheating. Keep in mind that the green beans and potatoes may be softer after freezing.
