Ybor City historically is know as being a town almost entirely compromised of immigrants, one of the large populations of Cuban immigrants came to this area in the 1880\u2019s. Without getting into too much more of the history you can guess, there was some pretty amazing food, specifically Cuban cuisine.<\/p>\n<p>After stuffing my face with a few Cuban Sandwiches I knew I was going to need to recreate them at home. It is actually the cut of pork that comes from the upper part of the front shoulder. It is the cut of pork typically used for making pulled pork.<\/p>\n<p>The pork cooks slowly with the marinade in the crockpot and comes out tender and ready to eat.<\/p>\n<p>Now my one problem with some recipes like this is that the meat sometimes can come out a little soggy, so to alleviate that I am using that same trick I use for my Crockpot Carnitas. After pulling the pork apart I place it on a sheet tray and place it under the broiler in the oven for a few minutes. This crisps the pork right up, solving the texture problem. A standard 6 quart slow cooker will do the trick!<\/p>\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n<ul class=\"wp-block-list\" data-slot-rendered-content=\"true\">\n<li><strong>Pork Butt\u00a0<\/strong>\u2013 Around 4 pounds &amp; preferably boneless, also called a Boston Butt. It is actually the cut of pork that comes from the upper part of the front shoulder. It is the cut of pork typically used for making pulled pork. If you only have one with a bone available it should work just fine.<\/li>\n<li><strong>Fresh Orange Juice\/1 large orange<\/strong>\u00a0\u2013 Part of the key to this recipe is using fresh squeezed citrus juices, so buy the actually fruits instead of the juices. You should only need 1 large orange.<\/li>\n<li><strong>Fresh Lime Juice\/2-3 limes<\/strong>\u00a0\u2013 Same goes for the lime, if possible try to grab fresh limes, you will need to use between 2 late limes or 3 small limes. If by chance you try to use bottled lime juice just note that some of the true lime flavor might get lost and your dish will most likely be relying on citric acid for flavor (which is totally fine but you might loose any lime flavors).<\/li>\n<li><strong>Kosher Salt<\/strong>\u00a0\u2013 If you don\u2019t have kosher salt substitute for sea salt. if you need to use table salt use half of the amount. So before you start all the prep get the crockpot out and turn on to LOW. This ensures that your food starts the cooking process immediately once everything is added instead of waiting for the crockpot to come to temperature.<\/em><\/strong><\/p>\n<\/div>\n<\/div>\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n<p>Begin by carefully cutting the pork butt into 4 equal sized pieces. Add them to the crockpot.<\/p>\n<p>In a mixing bowl add the orange juice, lime juice, salt, cumin, oregano, and garlic. Transfer to the oven and broil about 5 minutes or until the tops of the pork start to turn brown and cirspy. This is a great recipe to actually prep ahead the night before for a more flavorful dish! Proceed with the cutting of the pork and adding it so a large container with a lid or a ziplock bag. Make the sauce as written and add it to the pork. Make sure you give is a stir or shake so everything is covered. You can let it marinade for up to 24 hours before dumping into the crockpot to cook! This will give your dish extra tenderness and flavor!<\/p>\n<p><strong>How is mojo pronounced?<\/strong><\/p>\n<p>You look at the word mojo and think it might be pronounced, \u201cmo-joe\u201d but it is Spanish. So Mojo is pronounced \u201cmo-ho\u201d because the letter\u00a0<em>j<\/em>\u00a0is pronounced as an\u00a0<em>h<\/em>, just like jalape\u00f1o.<\/p>\n<p><strong>What to make with mojo pork?<\/strong><\/p>\n<p>You can of course serve it as a main dish by itself but I enjoy it most as a Cuban Bowl or in a Cuban Sandwich.<\/p>\n<p>But in general you might want to serve it with rice Shred pork with two forks and spread it out across the sheet pan. Take 1\/4 cup of the sauce from the crockpot and sprinkle it over the pork. Transfer to the oven and broil about 5 minutes or until the tops of the pork start to turn brown and crispy.
