This recipe is truly simplicity at its best, great for a busy weeknight dinner. This is one of my favorite ways to get dinner on the table when there is a lot of after school events going on. All the work is done before the chaos and the food is ready to go at dinner time.<\/p>\n<p data-slot-rendered-content=\"true\">The best part is that this can be a complete meal that the entire family can enjoy. I like to use the super convenient bags of pre-washed baby potatoes, that way there is zero prep work for the potatoes.<\/li>\n<li><strong>Carrots<\/strong> \u2013 You will want about a pound, most store will sell carrots in a one pound bag so you can just grab one of those if they have it. Otherwise a pound is about 6 large carrots. \u00a0(You can also just use baby carrots too)<\/li>\n<li><strong>Chicken Legs<\/strong> \u2013 You will want 8 chicken legs. I found this is about the perfect amount to lay out in a layer in the crockpot, 8 chicken drumsticks will be about 3 pounds.<\/li>\n<li><strong>Olive Oil<\/strong> \u2013 Yes we are putting everything in the crockpot but we are using a little olive oil to get the Italian Seasoning to stick and stay on the veggies and chicken.<\/li>\n<li><strong>Italian Seasoning<\/strong> \u2013 If you don\u2019t have any at home you can always pick up some at the grocery store or you can hop over to my recipe for Homemade Italian Seasoning. Peel and cut the carrots into 1-inch pieces. In a mixing bowl, drizzle olive oil over the baby potatoes and carrots.
