We kept it warm in the slow cooker on low and it was perfect and so delicious, warm and comforting. I immediately knew I had to share the recipe with you!<\/p>\n<p>Slow cooker meals are my favorite for busy weeknights. I love the convenience of getting the prep work of making dinner done ahead of time! This recipe is really easy to put together, and all that\u2019s left to do at dinnertime is shred the chicken. Like my stovetop Chicken Stew, this slow cooker chicken stew is so cozy. These steps make a big difference in the flavor of the stew, so don\u2019t skip them!<\/p>\n<p><strong>Brown the chicken.<\/strong> First, season the chicken with salt and pepper. Then brown it on both sides in a skillet on the stove. Transfer it to the slow cooker.<\/p>\n<p><strong>Saut\u00e9 aromatics and make roux to thicken the stew.<\/strong> Melt the butter in the skillet, then add the onion and cook until softened. Add the garlic and flour and cook for 30 seconds, stirring. Pour about \u00bd cup of the chicken broth into the pan and scrape up any browned bits from the bottom of the pan. The mixture will thicken; this is the roux that will thicken the stew.
