Golden Air Fryer Crispy Cod That Shatters with Every Bite

Ingredients
- 4 cod fillets (140–170 g / 5–6 oz each)
- 2 tablespoons all-purpose flour
- 2 large eggs, beaten
- 1½ cups panko breadcrumbs
- ½ cup finely grated Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil or avocado oil spray
- Lemon wedges, for serving
- Fresh chopped parsley, for garnish (optional)
Instructions
- Preheat your air fryer to 200°C (400°F) for 3–5 minutes.
- Pat the cod fillets completely dry with paper towels.
- Place the flour in one shallow bowl, the beaten eggs in a second bowl, and mix the panko, Parmesan, paprika, garlic powder, onion powder, salt, and pepper in a third bowl.
- Coat each fillet in flour, dip into the egg, then press firmly into the panko mixture until fully coated.
- Lightly spray or brush both sides of the breaded fillets with oil.
- Arrange the fillets in a single layer in the air fryer basket, leaving space between each piece.
- Air fry for 5–6 minutes.
- Carefully flip the fillets, spray lightly with a little more oil if needed, and cook for another 5–6 minutes, until the coating is deep golden brown and the fish flakes easily with a fork. The internal temperature should reach 63°C (145°F).
- Garnish with fresh parsley and serve immediately with lemon wedges.
Optional Flavor Variations
- Garlic Herb: Add 1 teaspoon dried parsley and ½ teaspoon dried dill to the breadcrumb mixture.
- Cajun: Replace the paprika with Cajun seasoning.
