Ingredients for 2 servings (1 serving = 2 potatoes):
- – 4 large potatoes – about 960g
– 2 tablespoons olive oil
– 3/4 tablespoon salt
– 160g hot smoked salmon
– 2 tablespoons butter
Sauce:
– 160g Greek yogurt
– 1/2 tablespoon garlic powder
– 3/4 tablespoon mustard
– 1 large pickled cucumber, finely chopped
– 1 tablespoon chopped chives
– 1 tablespoon chopped coriander
– a pinch of salt
– a pinch of pepper
Preparation:
1. Peel and dry the potatoes. Drizzle with oil, sprinkle with salt, and coat with flour.
2. Place the potatoes in the air fryer basket and cook for 60 minutes at 150°C (300°F). They should be tender when pierced with a fork – it should slide in easily.
3. While the potatoes are cooking, prepare the sauce. Combine the Greek yogurt, garlic powder, mustard, pickled cucumber, chives, cilantro, salt, and pepper. Pat the cucumber dry with a paper towel beforehand. Store the sauce in the refrigerator.
4. Slice the warm potatoes open, pressing out the skins from the sides.
5. Place a small amount of butter in the center of each potato and mix it in with a fork.
