Potato chips are my Achilles heel of snacks. I know they’re not ‘healthy,’ but I can’t resist. So, rather than break my habit, I’ve committed to making homemade potato chips that are ACTUALLY healthy!

Why I love this recipe

  • Truly guilt-free. Compared to regular fried potato chips, mine use a fraction of the oil and salt.
  • Simple ingredients. All you need are potatoes, cooking spray, and salt.
  • Fun to customize. I kept the base recipe simple with just a dash of salt, but if you’re after more flavors, I’ve got you covered!
  • Everyone will love them. Like. my air fryer tortilla chips, no one (and I mean that!) will be able to resist these potato chips.
  • No planning needed! So long as you have an air fryer and potatoes, you can have potato chips whenever the cravings strike.

Ingredients needed

  • Potatoes. Russet potatoes are my go-to for any fry or chip recipe because they’re starchy, which helps the chips crisp up beautifully.
  • Cooking spray. I used olive oil cooking spray, but any kind will do.
  • Salt. To taste.

How to make air fryer potato chips

Step 1- Cut the potatoes. Using a mandoline slicer or a sharp knife, cut the potatoes into thin slices.

Step 2- Soak. Place the slices in a large bowl and cover with cold water. Soak for 10 minutes. Drain the potatoes, place them on paper towels, and pat dry.

Step 3- Assemble. Grease the air fryer basket with cooking spray and place a single layer of sliced potatoes on top.

Step 4- Air fry. Spritz with more oil, add salt, and air fry for 15 minutes, flipping halfway through.

Arman’s recipe tips

  • Use different potatoes. While I prefer the texture of Russet potatoes, you could also use Yukon gold potatoes, as they’re a good balance of starchy and waxy.
  • Slice the potatoes evenly so they all crisp up at the same time.
  • Make sure they’re VERY dry. It’s important to soak up as much excess moisture as possible so the chips don’t become soggy.
  • Don’t crowd the basket. You want the chips to get equal access to the heat so they get crispy. That means no touching (see my pictures and video).

Variations

  • Sea salt vinegar chips. Lightly spritz the chips with white vinegar before air frying.
  • BBQ chips. Toss the chips in BBQ seasoning or a mix of smoked paprika, cumin, garlic powder, onion powder, brown sugar, salt, and chili powder.
  • Ranch chips. Sprinkle dry ranch seasoning mix over the potatoes.
  • Salt and pepper chips. Season with coarsely ground black pepper.
  • Dill pickle potato chips. Add fresh dill, onion powder, and garlic powder. Optionally, spritz with vinegar.

Storage instructions

To store: Leftover chips should be stored in an airtight container at room temperature on the counter for up to one week.

  • 1/2 teaspoon salt
  • 1/4 teaspoon cooking spray

Instructions

  • Preheat the air fryer to 180C/350F.
  • Using a mandoline slicer or a sharp knife, cut the potatoes into thin slices.
  • Place the potato slices in a large bowl and cover with ice water. Soak for 5 minutes.
  • Drain the potatoes and place them on paper towels and pat dry.
  • Grease the air fryer basket with cooking spray and place a single layer of sliced potatoes on top. Spritz with more oil, add some salt, and air fry for 15 minutes, flipping halfway through.

STORAGE: Leftover chips should be stored in an airtight container at room temperature on the counter for up to one week.
